Gaz’s Boozy Mince Pies

Nothing says Christmas quite like mince pies.
These vegan friendly boozy mince pies are sure to impress this Christmas. We won’t tell anyone how easy they were to make… Promise!

Ingredients

  • Mince Pie Filling
  • 325g dried fruit mix
  • 2 Braeburn apples, grated
  • Juice & rind of 1 orange, grated
  • Juice & rind of 1/2 lemon, grated
  • 35g agave nectar
  • 1 tsp all spice
  • 35ml vegan friendly brandy
  • 35ml ​Kin​ ​Vodka​ ​toffee​ ​vodka
  • Pastry
  • 250g plain flour
  • 125g icing sugar
  • 125g vegan margarine
  • 2 tbsp cold water

Instructions

  1. To prepare the filling, mix together all the filling ingredients in a large mixing bowl – stir well.

  2. Cover & leave the mixture over night or for at least 12 hours. Stirring every now & then if possible.

  3. Place the mince pie filling in sterilised jars until ready to use (it will last months in the fridge)

  4. To make the pastry, in your Ninja blender – with the dough blade inserted. Add all the ingredients and pulse until fully combined into one ball of pastry dough.

  5. Wrap the dough in cling film & place into the fridge and allow to chill for at least 30 minutes before rolling out.

  6. Sprinkle some flour onto your work surface & roll the pasty out to around 3mm thick.

  7. Grease a shallow muffin tin & pre heat your oven to 180 degrees.

  8. Using pastry cutter cut 12 circles to fit your muffin tin.

  9. Place each pastry disc into your muffin tin, then add a spoonful of mince pie filling mixture into each one.

  10. Cut pastry disc tops for each one & place on top of the filling.

  11. Sprinkle over some caster sugar.

  12. Bake for 12-15 minutes or until golden.

  13. Before serving allow the mince pies to cool slightly.
