Flourless Almond & Coconut Protein Cookies

These light, high protein, flourless cookies are the perfect healthy sweet treat to satisfy your cookie cravings. They are so easy to make and gluten free, refined sugar free and vegan. It’s a challenge not to eat them all at once!

Instructions

  1. Preheat the oven to 160​o​c and line a large baking tray with greaseproof paper

  2. Combine the ground almonds, flaxseed and protein powder together in a bowl

  3. Add the remaining ingredients to your Ninja blender or food processor and pulse 3-4 times until you have a smooth mixture

  4. Pour the mixture into the bowl with the dry ingredients

  5. Stir everything together until you have a soft cookie dough, you may need to use your hands to bring the dough together

  6. Break off pieces of the dough and press it between your hands to form a cookie shape

  7. Place the cookies on the lined baking tray and bake for 15 minutes

  8. Leave the cookies to cool on the tray for 5 minutes before moving them to a cooling rack to cool completely

After being diagnosed with coeliac disease and IBS, I had to completely overhaul my diet. I found that the majority of gluten-free food on offer was tasteless, stodgy and full of sugar. I was eventually forced to embark on the low FODMAP diet, which meant I had to make even more changes to my diet. After a short while I became disillusioned with the tasteless, stodgy and sugar-laden foods available to me, so I decided to create my own.
