This recipe makes 6 large muffins. A delicious twist on the traditional quiche, to reduce calories and make this recipe lower in fat I decided to ditch the crust.
Feta, Spinach & Chive Mini Quiches
This recipe is fantastic to have in the fridge to snack on and a great savoury snack to have in your lunch box at work.
- 10 medium-sized eggs
- 200g feta cheese
- 50g spinach
- 10g fresh chive (chopped)
- 1 tsp. olive oil
- ¼ tsp. turmeric powder
- ½ onion (finely chopped)
- 2 clove of garlic (crushed)
- Salt & pepper to taste
Begin by pre-heating the over at 180C degrees/Gas mark 4.
Using the bowl of your Ninja Kitchen System, pour all of the ingredients inside the bowl and pulse approximately 3-5 times until all of the ingredients are well combined and the spinach and chive are also chopped.
Use silicone moulds instead of metal as they remove easier and are most likely not to stick, spray with olive oil and divide the mixture equally into the moulds.
Place the quiches in the oven and bake for 18-22 minutes until golden on top.
Remove from the oven and allow the quiches to cool completely before removing from the moulds as they may break otherwise.
