If you’re looking for the ultimate chewy but crunchy vegan and gluten-free cookie, this is the recipe you NEED in your life. With added dates, cacao nibs and the secret weapon ingredients – The Coconut Company coconut sugar and coconut nectar to give them a caramel-like flavour – these are the perfect energy-boosting snack when hunger or your sweet tooth calls!

Ingredients

  • For The Cookies
  • 125g almonds
  • 100g dates, soaked in hot water for 10 minutes
  • 75g oats (can be gluten-free)
  • 30g cacao or cocoa powder
  • 3 tbsp nut butter
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • For The Filling
  • 3 tbsp smooth nut butter or tahini
  • 3 tbsp maple syrup
  • 2 tbsp cacao powder
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • To Decorate
  • 30g dark chocolate, broken into pieces
  • 1 tsp coconut oil
  • Cacao nibs

Instructions

  1. First place the almonds, oats, dates and cacao powder into your Ninja Kitchen Nutri Ninja Auto IQ blender and whizz up until broken down. Add in the nut butter, cinnamon and vanilla and whizz again until everything is incorporated and you have a dough mixture.

  2. Use your hands to shape into cookies (use about 2 tbsp of mixture per cookie) and make an indentation in the middle with your thumb, to allow for the filling. Place on a baking tray lined with greaseproof paper and chill in the fridge.

  3. Meanwhile beat together the filling ingredients. Add a small spoonful into the middle of each.

  4. Gently melt the dark chocolate and coconut oil then drizzle over each cookie. Chill in the fridge for at least 1 hour.

  5. Sprinkle over cacao nibs then enjoy straight from the fridge!
