Date & Coconut Squares

I love the combination of sweet dates with the nutty cashew butter and subtle coconut. These little squares make a great accompaniment to a cup of tea mid-morning or mid-afternoon.

Ingredients

  • 100g (squishy) dates
  • 75g cashew butter
  • 45g coconut flour
  • 3/4 tsp vanilla bean paste
  • Pinch of salt
  • Topping (optional) 30g dark chocolate

Instructions

  1. Pulse together all of the ingredients in your blender (or a food processor) until all of the dates have been broken down.

  2. Line a loaf tin with cling film or baking paper and tip in the mixture. Press it evenly into the baking tin. Try to make the top look smooth and leave in the fridge for 20-30 minutes.

  3. Cut into squares and cover in melted chocolate if desired. Store in an air tight container in the fridge for around 3-5 days.
