Date Caramel Snickers Bites

Ideal at any time of year but especially for Easter, these no-bake Snickers Bar treats are a healthier alternative to the traditional classic. With a ‘shortbread’ base, a thick date caramel and chocolate topping and crunchy peanuts, you can’t go wrong with this combination!

Ingredients

  • For The Base
  • 75g oat flour
  • 2 tbsp coconut oil, melted
  • 2 tbsp almond butter
  • 4 tbsp maple syrup
  • 2 tbsp almond milk
  • For the Date Caramel
  • 150g dates, soaked in hot water for 10 minutes
  • 2 tbsp nut butter
  • 2 tbsp almond milk
  • Pinch of salt
  • 1 tsp cinnamon
  • Dash of vanilla
  • For The Topping
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 4 tbsp cacao or cocoa powder
  • Peanuts, to scatter over

Instructions

  1. First make the base: Mix together the ingredients to form a dough. Press into a lined tupperware box or small tin. Set aside.

  2. Meanwhile make the caramel: Simply drain the dates and place into your Ninja Kitchen Auto IQ with the other ingredients and blend to form a slightly chunky paste. Scrape out and spread over the base to cover and form a thick layer. Place in the freezer.

  3. Now melt the coconut oil and maple syrup then whisk in the cacao/cocoa powder until smooth. Pour this over the date layer to cover, sprinkle over the peanuts then return to the freezer for at least 4 hours to set.

  4. When ready to serve, remove from the freezer and place on a chopping board. Use a large sharp knife to cut into chunks – then serve!
