Dark Chocolate and Coconut Cookies

The gooey cookies are a life saver if you need something sweet in a short space of time. Whether you’re headed to a party or just need a quick revision snack, these are perfect. I’d recommend making them an hour or so before required so that you don’t burn yourselves eating them fast because they taste so amazing.

Ingredients

  • 50g melted coconut oil
  • 20g margarine
  • 30g apple puree
  • 125g coconut palm sugar
  • 1tsp vanilla extract
  • 1 egg (beaten)
  • 145g brown rice flour
  • 75g dark chocolate (chopped into chunks)

Instructions

  1. Preheat the oven to 180oC.

  2. Place the coconut oil, margarine, apple puree and coconut palm sugar in your Nutri Ninja and pulse until well combined. Add in the egg and vanilla extract, blend fast to avoid curdling.

  3. Finally add the brown rice flour and pulse until a smooth consistency remains. Remove the lid and stir in the dark chocolate chunks by hand.

  4. Use a dessert spoon to place equal size balls of mix onto a tray lined with baking parchment. Place in the oven for 8-10 minutes until lightly golden.

  5. Enjoy to your heart’s content (a personal favourite is with peanut butter).
