This dip is so creamy and perfect for sharing or having it all to yourself. I love creating a big platter with crispy oven roasted potato or any other veggies that I’m in the mood for and sprinkling it with chickpea croutons. Perfect for family or friends at get together events!
Creamy Avocado Dip
- 2 ripe Avocadoes
- 2 tbsp cashew butter
- 2 tbsp mixed herbs (parsley, basil, green onion)
- 1 juice of a lemon
- 1 tomato
- 1/2 cucumber
- Sprigs fresh parsley
- Pinch of salt
In your food processor place first 4 ingredients and blend till completely smooth.
Deseed the cucumber and chop it finely. Cut the tomato in half and try to squeeze some seeds as well. Chop it and finely mince the parsley.
Transfer everything to the food processor, season with salt and pulse a few times. Taste and add salt if needed. Serve straight away.
