Coffee & Vanilla Sandwich Cookies

These coffee & vanilla sandwich cookies are the ultimate sweet treat – not only do you get two cookies in one but you get an incredible gooey filling too, what more could you want? The perfectly crunchy, oaty, vanilla cookie and smooth, soft, creamy, coffee filling are a combination dreams are made of! These cookies may look and taste super indulgent but they’re actually entirely refined sugar free, flour free, gluten free, suitable for vegans and contain only the most natural ingredients – win win!

These Coffee & Vanilla Sandwich Cookies couldn’t be more simple to make -why not try making them for friends and family? They’re bound to be impressed!


  • For The Cookies
  • 120g oats (blended into flour)
  • 50g ground almonds
  • 4 tbsp maple syrup
  • 2 tbsp coconut oil
  • 2 tbsp water
  • 1 tsp vanilla extract
  • Coffee Cream Filling
  • 4 tbsp cashew butter
  • 1 tbsp instant coffee
  • 2 tbsp maple syrup
Prep Time


  1. Soak the cashews in water overnight or for a minimum of 4 hours.

  2. Pre-heat the oven to 150 degrees celsius.

  3. Add the oats to your Ninja Kitchen food processor and blend until a flour forms. Then add in the remaining cookie ingredients and blend until combined into a dough.

  4. Shape the dough into cookies using either your hands or by rolling the mixture out and using a cutter. Make sure they’re all the same size and you’ve got an even number of cookies.

  5. Place all the cookies on a lined baking tray and place into the oven for 10 minutes to bake.

  6. Combine the instant coffee with just a splash of hot water to dissolve the granules then combine with the cashew butter and maple syrup to create the creamy coffee filling.

  7. Once the cookies are cool spread a generous layer of the coffee cream onto one cookie and place another cookie on top to create the sandwich!

  8. Enjoy immediately or keep in an airtight container and consume within 3 days.
