Coffee & Vanilla Sandwich Cookies
These Coffee & Vanilla Sandwich Cookies couldn’t be more simple to make -why not try making them for friends and family? They’re bound to be impressed!
- For The Cookies
- 120g oats (blended into flour)
- 50g ground almonds
- 4 tbsp maple syrup
- 2 tbsp coconut oil
- 2 tbsp water
- 1 tsp vanilla extract
- Coffee Cream Filling
- 4 tbsp cashew butter
- 1 tbsp instant coffee
- 2 tbsp maple syrup
Soak the cashews in water overnight or for a minimum of 4 hours.
Pre-heat the oven to 150 degrees celsius.
Add the oats to your Ninja Kitchen food processor and blend until a ﬂour forms. Then add in the remaining cookie ingredients and blend until combined into a dough.
Shape the dough into cookies using either your hands or by rolling the mixture out and using a cutter. Make sure they’re all the same size and you’ve got an even number of cookies.
Place all the cookies on a lined baking tray and place into the oven for 10 minutes to bake.
Combine the instant coffee with just a splash of hot water to dissolve the granules then combine with the cashew butter and maple syrup to create the creamy coffee ﬁlling.
Once the cookies are cool spread a generous layer of the coffee cream onto one cookie and place another cookie on top to create the sandwich!
Enjoy immediately or keep in an airtight container and consume within 3 days.
