Coconut, Peanut Butter & Chocolate Bites

Three of my personal favourite things – chocolate, coconut and peanut butter – are brought together in these INSANELY delicious little bites, Rich and indulgent, these vegan-friendly goodies require no baking and are super simple to make but look very effective and taste incredible, and would go down well with anyone who also loves this decadent flavour combination!


Coconut, Peanut Butter & Chocolate Bites

Ingredients

  • For The Peanut Butter Base
  • 100g oats
  • 1 tsp cinnamon
  • 3 tbsp peanut butter
  • 4 tbsp maple syrup
  • 2 tbsp coconut oil, melted
  • For The Coconut Filling
  • 3 tbsp coconut oil
  • 3 tbsp maple syrup
  • 70g desiccated coconut
  • For The Chocolate Topping
  • 3 tbsp coconut oil
  • 3 tbsp maple syrup
  • 5 tbsp cacao powder
  • Cacao nibs and coconut chips to decorate

Instructions

  1. Place all of the ingredients for the base into your Ninja Kitchen Nutri Ninja blender and pulse quite a few times until the mixture comes together in a slightly sticky flapjack mixture.

  2. Press into the base of a lined 15cm x 20cm tin or tub with your hands evenly. Set aside.

  3. Next, melt the coconut oil and whisk in the maple syrup and coconut to form a slightly thick but spreadable mixture. Spoon this over the base to cover and use the back of a spoon to spread and pat down. Chill while you make the topping.

  4. Melt the coconut oil then whisk in the maple syrup and cacao powder to form a smooth chocolate sauce. Pour this over the coconut layer to cover. Sprinkle over the cacao nibs and coconut then place in the fridge for at least 2 hours to set.

  5. Remove from the tub or tin and onto a chopping board. Cut into 8-10 pieces and enjoy!
