Do you ever look at bounty bars in the supermarket and wonder if you could ever recreate a healthier version? This recipe will let you do just that! The smooth texture of the chocolate coated bars will give you all you need to keep you going tomorrow afternoon.
Coconut Delight Bars
The pecans give that extra ‘crunch’ that’ll have you wishing you made more!
- 100g coconut flour
- 100g vanilla whey protein powder
- 2 tbsp coconut sugar
- 2 tbsp melted coconut oil
- 100ml milk
- Handful pecans, halved
- 100g dark chocolate
- Desiccated coconut for decoration
Place the coconut flour, whey protein and coconut sugar in your NutriNinja and blend until well combined.
Add the melted coconut oil and milk and continue to blend.
Stir in the halved pecans.
Use your hands to scoop up handfuls of the mixture and form log shapes. If the mixture is not sticking together, add slightly more coconut oil.
Once you have created the bars, place onto a baking tray and refrigerate for half an hour or so until hard.
Melt the dark chocolate in a glass dish and drizzle over the coconut bars. Top with desiccated coconut!
