Chocolate & Strawberry Tarts
These tarts would make a real show-stopping dessert at any dinner party, or why not make them for your loved one next time they deserve a treat?
- 100g almonds
- 60g oats
- 6 medjool dates
- 2 tbsp coconut oil
- 1 tbsp water
- 1 tsp vanilla
- Chocolate Cream Layer
- 1 & a half frozen bananas
- 3 tbsp coconut cream
- 2 tbsp cacao powder
- 1 tbsp maple syrup
- 6 strawberries
- 50g hazelnuts (optional)
Start by making the base. Add the almonds and oats to your Ninja Kitchen food processor and blitz into a flour-like consistency. Then add the pitted dates, the coconut oil, water and vanilla extract the the food processor and blend into a sticky mixture.
Press this mixture down into mini tart cases – I find silicone works best. Then place into the freezer to firm up whilst you making the chocolate filling.
Add the frozen bananas, coconut cream and maple syrup to your food processor and blend into a smooth, creamy mixture. You may need to stop blending and give the mixture a stir a couple of times. Then add in the cacao powder and pinch of salt, blend again until fully combined.
Remove the tarts from the freezer and spoon the creamy chocolate mixture into the tarts to fill then. Top with a couple of slices of fresh strawberries and sprinkling of chopped hazelnuts (optional).
Place into the fridge for 2 hours to set.
