These rich and creamy raw chocolate & strawberry tarts are every chocolate lovers dream! The base is a nutty, oaty mixture with a wonderful vanilla taste and the chocolate filling is sublimely creamy and pure chocolate heaven! The slices of fresh strawberries on top add a juicy, sweet addition to these tarts and pair perfectly with all the other wonderful flavours in this recipe.

Ingredients

  • Base

  • 1 tbsp water
  • 1 tsp vanilla
  • Chocolate Cream Layer

Instructions

  1. Start by making the base. Add the almonds and oats to your Ninja Kitchen food processor and blitz into a flour-like consistency. Then add the pitted dates, the coconut oil, water and vanilla extract the the food processor and blend into a sticky mixture.

  2. Press this mixture down into mini tart cases – I find silicone works best. Then place into the freezer to firm up whilst you making the chocolate filling.

  3. Add the frozen bananas, coconut cream and maple syrup to your food processor and blend into a smooth, creamy mixture. You may need to stop blending and give the mixture a stir a couple of times. Then add in the cacao powder and pinch of salt, blend again until fully combined.

  4. Remove the tarts from the freezer and spoon the creamy chocolate mixture into the tarts to fill then. Top with a couple of slices of fresh strawberries and sprinkling of chopped hazelnuts (optional).

  5. Place into the fridge for 2 hours to set.

    Enjoy!

My love and passion for vegan food was initially inspired by health problems. After being diagnosed with polycystic ovary syndrome (PCOS) and coeliac disease as well as suffering with mental health issues, I realised my diet needed to change drastically. My symptoms were affecting every area of my life, so I began to look at what food I was putting into my body and educated myself on how nutrition has a direct impact on how we feel, physically and mentally.
