A deliciously gooey coconut macaroon, this recipe is refined sugar and gluten-free. The combination of the chocolate and orange is absolutely delicious. Regular macaroons are packed with oils and sugars; enjoy these guilt-free macaroons every day of the week.
Chocolate Orange Coconut Macaroons
- 240g desiccated coconut
- 90g raw cashew nuts
- 4tbsp coconut oil
- 2 oranges
- 1/4tsp turmeric powder
- 90g stevia
- 1/4tsp salt
- 100g sugar-free chocolate
Begin by pre-heating the oven to 180C degrees.
Zest and squeeze out the juice from the oranges. Place all of the ingredients in the bowl of your Ninja Kitchen System with the metal blade. Pulse several times until the oils are release from the desiccated coconut and the ingredients are well combined.
Roll the mixture into coconut macaroons, place them on a baking tray lined with grease proof paper, and bake for 15-18 minutes.
Remove the macaroons from the oven and allow them to cool completely.
Once the coconut macaroons have melted, melt the chocolate in a bowl over hot water and cover the smooth side with chocolate and drizzle the opposite side.
Place in the fridge to set.
