Chocolate & Ginger Brownie

Deliciously rich, gooey brownies made from a secret healthy ingredient – prunes, if you’re wondering! – with ginger to add a warming autumnal twist is the perfect treat for November. Add in walnuts or fruits like blackberries if you want, this makes a good base for a tasty brownie!

Ingredients

  • 100g tinned prunes + 150ml of the juice
  • 100g dark chocolate, broken into pieces
  • 2 tbsp coconut oil
  • 100g oat flour
  • 75g instant polenta
  • 75g coconut sugar
  • 3 tbsp cacao or cocoa powder
  • 1 tsp ground ginger
  • 1 tsp baking powder
  • For The Drizzle
  • 2 tbsp juice from the prunes
  • 2 tbsp maple syrup
  • Splash of almond milk
  • 3 tbsp cacao or cocoa powder

Instructions

  1. First preheat the oven to 180 degrees C and grease and line a 9×9 in baking tin.

  2. Place the prunes and the juice into your Ninja Kitchen Nutri Ninja blender and whizz up until smooth.

  3. Meanwhile, gently melt the chocolate and coconut oil then add this to the blender along with the rest of the brownie ingredients. Whizz up until you have quite a thick batter.

  4. Spoon this into your prepared tin and spread out evenly. Bake for 20 minutes until firmed up, then leave to cool in the tin.

  5. Once cooled, remove from the tin and place on a wire rack or board. Whisk together the juice from the prunes, maple syrup, cacao or cocoa powder and enough milk to form a slightly runny chocolate paste, then drizzle over. Scatter over cacao nibs and enjoy!
