In collaboration with Montezuma’s wonderful chocolate, these easy healthy blondies are packed with chunks of their giant chocolate buttons are a hidden but delightful surprise!
Chocolate Chunk Peanut Butter Blondies
- 140g oat flour
- 50g ground almonds
- 50g coconut sugar
- 1 tsp baking powder
- 150g cashew butter
- 3 tbsp coconut oil, melted
- 4 tbsp maple syrup
- 140ml almond milk
- 1 tsp vanilla extract
- 75g Montezuma Organic 73% Cocoa Very Dark Chocolate Bar
Preheat the oven to 180 degrees C and line a 9x9in baking tin.
Place the oat flour, ground almonds, coconut sugar and baking powder into your Ninja Kitchen Auto IQ.
Add the cashew butter, coconut oil, maple syrup, almond milk and vanilla and pulse for a minute or two until smooth and well combined to form a nice thick batter. Fold in the chocolate buttons or chunks.
Spoon the mixture into the lined tin and smooth out evenly. Bake for 20-25 minutes until golden then leave in the tin to cool.
Transfer to a chopping board and cut into 9-12 bars. Place on a wire rack then drizzle with melted chocolate and allow to set. Now enjoy!
