Instructions

  1. Preheat the oven to 180 degrees C and line a 9x9in baking tin.

  2. Place the oat flour, ground almonds, coconut sugar and baking powder into your Ninja Kitchen Auto IQ.

  3. Add the cashew butter, coconut oil, maple syrup, almond milk and vanilla and pulse for a minute or two until smooth and well combined to form a nice thick batter. Fold in the chocolate buttons or chunks.

  4. Spoon the mixture into the lined tin and smooth out evenly. Bake for 20-25 minutes until golden then leave in the tin to cool.

  5. Transfer to a chopping board and cut into 9-12 bars. Place on a wire rack then drizzle with melted chocolate and allow to set. Now enjoy!

My love of healthy food was originally inspired by my commitment to fitness and wellbeing. But that's not to say I don't like a treat from time to time. It was when I started looking for healthy treats that still satisfied my sweet tooth that I realised how little there was to choose from. Despite being labelled 'healthy', many of the recipes I came across relied heavily on processed sugar and fat - which is why I decided to take matters into my own hands.
