Chocolate Caramel Crunch Slice

One of the most delicious, indulgent treats for peanut butter and chocolate lovers out there! An oaty chocolate ‘shortbread’ and a peanut butter caramel filling topped with a crispy chocolate layer – yum!

Ingredients

  • For the Base
  • 75g oats
  • 25g coconut flour
  • 2 tbsp cacao powder
  • 2 tbsp coconut oil
  • 2 tbsp coconut nectar or maple syrup/agave nectar
  • 2 tbsp almond milk
  • For the Caramel
  • 6 tbsp cashew butter or almond
  • 1 tbsp coconut oil
  • 3 tbsp coconut nectar or maple syrup/agave nectar
  • For the Chocolate Topping
  • 20g puffed rice
  • 4 tbsp cacao nibs
  • 1 tbsp coconut oil
  • 75g dark chocolate, broken up into pieces

Instructions

  1. First make the base: Blend the oats to form a flour in your Ninja Kitchen blender then add the coconut flour and cacao powder.

  2. Gently melt the coconut oil and coconut nectar, then whisk in the almond milk and pour into the blender. Pulse again a few times so the mixture comes together to form a dough

  3. Press into a small lined tin or tray and push down with your fingers into an even layer. Set aside.

  4. For the caramel: Gently melt the nut butter, coconut oil and coconut nectar until smooth then pour this over the base. Sprinkle over the puffed rice and cacao nibs to cover in an even layer and press down slightly into the caramel.

  5. Melt the coconut oil and the chocolate, then pour over the top to cover everything. Place in the fridge for at least 4 hours to set.

  6. When ready to serve, lift out and place on a chopping board. Cut into 6-8 slices (or make more bites) and enjoy!
