There’s something about a traditional party buffet that just underwhelms. The predictable selection of quiches, sandwiches, vol-au-vents, chicken legs and crisps is laid out in parties and social gatherings throughout the land. Whilst filling and relatively cheap, these spreads don’t exactly inspire people to tell their friends about the wonderful buffet they once had. To get people talking, you need to push the boundaries if buffet convention — and this recipe for Cherry Tomato Bites does just that.
Packed with flavour, these nibbles are just what you need to spruce up a predictable buffet. Combining the creamy saltiness of feta cheese and the sweetness of cherry tomatoes is a masterstroke. These flavoursome treats not only deliver flavour, they also look fantastic on the plate. So assemble the ingredients and get your favourite blender ready — this is going to be fun!
Cherry Tomato Bites
- 24 large cherry tomatoes
- 1 large ripe tomato
- 115g feta cheese
- 15ml lemon juice
- 9g chives
- Salt to taste
Start your bites by removing the stone from your avocado and peeling the skin.
Crumble the feta into pieces.
Slice off around 5mm from the bottom of each cherry tomato – making sure to keep the section you removed.
Remove the seeds and flesh from inside your tomatoes.
Place the remaining ingredients in your blender, and blend until the mixture is smooth.
Place a teaspoon of the mixture in the hollowed tomatoes, and top them 5mm piece of tomato you removed earlier on the top
Serve with a side salad and some balsamic vinegar.
