This super simple recipe can be made in only 15 minutes – perfect for a busy week night dinner. You can even experiment with adding different vegetables and spices to this basic but flavoursome recipe.
Butternut Squash & Red Onion Dahl
- 300g butternut squash (peeled, chopped and de-seeded)
- 100g red onion (peeled and chopped)
- 400g red lentils
- 200g sweetcorn
- 200g spinach
- 500ml water
- 2 tsp vegetable stock powder (or 1 small stock cube)
- 2 tsp medium curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
Add all of the ingredients, apart from the sweetcorn and spinach, to the Ninja Foodi and stir.
Place the Pressure Lid on your Ninja Foodi. Select ‘pressure’ for 5-8 minutes. Choose 5 minutes for firmer lentils and 8 minutes for a fluffier dahl.
Once the dahl is cooked be sure to release the pressure before opening the lid.
Stir in the sweetcorn and spinach, which will wilt and cook through with the heat of the dahl.
Leave it to cool slightly before serving.
Serve with brown rice, fresh coriander and a squeeze of lemon.
