Buckwheat is one of those totally underrated grains which they definitely don’t receive enough attention. Buckwheat is technically a seeds and is jammed packed with incredible health properties. From a skin point of view buckwheat is rich in antioxidants and flavonoids which helps to slow down the aging process.
Buckwheat chocolate pudding
Once buckwheat has been soaked can be transformed in the creamiest and silkiest of the pudding. To make it extra indulgent I have added avocado and almond butter which combined with date and cacao powder create the most decadent of the chocolate mousse!
- 200g raw buckwheat groats
- 1 tbsp almond butter
- 1/2 avocado
- 3 tbsp raw cacao powder
- 3-4 medjool dates, pitted (depending on how sweet you like it)
- 125ml almond milk
- My favourite Toppings:
- Coconut yogurt
- Fresh berries
- Melted dark chocolate
The night before soak the buckwheat in plenty of cold water. You want to soak them for a minimum of 5-6 hours.
Drain the buckwheat groats and rinse them until the water runs clear and you don’t have any more that kind of slimy foam that forms during the soaking process.
Place the soaked buckwheat groats and all the other ingredients (apart from the toppings) into the Ninja blender and blend for few minutes until you have a completely smooth and creamy mixture.
Pour the chocolate pudding into a bowl or small pots and decorate with your favourite toppings. I personally love to add some coconut yogurt, fresh berries and a drizzle of melted dark chocolate.
