I have always struggled with Brussel sprouts until I had them in a coleslaw. This coleslaw is healthy, delicious and filling. It is a great side to have during a cleanse.
Brussel Sprout Coleslaw
- 200g Brussel sprouts, ends cut off
- 1 large carrot, peeled
- 1 red onion, peeled and sliced finely
- 1 red chilli, finely chopped
- Half small handful of coriander, chopped
- 100g Greek yoghurt
- 2 cloves garlic, crushed
- Juice of 1 lime
- 1 tsp honey
- Salt & Pepper, to taste
Put the Sprouts and Carrot in the Ninja Processor and pulse till finely diced.
Combine the yoghurt, garlic, lime and honey in a small bowl and whisk together.
Add the shredded brussel sprouts, carrots, red onion, chilli and coriander to a large bowl and stir in the yoghurt dressing.
Season to taste.
