Get your day started with a little bowl of paradise. This Bounty Smoothie Bowl is every coconut lover’s dream – creamy coconut, sweetened with frozen banana and grapes, and a drizzle of dark chocolate.
Bounty Smoothie Bowl
- For The Smoothie
- 300g frozen virgin young Thai coconut meat (see notes)
- 1/2 cup coconut water
- 1/4 cup coconut cream (see notes)
- 1 frozen banana
- 1/2 - 1 cup frozen white grapes
- 1 tbsp macadamia / cashew butter (optional)
- 1 - 2 tsp coconut essence or 25 drops concentrated extract
- 1 tsp lemon juice
- Pinch sea salt
- For The Topping
- 30g good quality dark chocolate, melted (85% cacao solids or above)
- 1/4 - 1/2 cup coconut flakes
Add your frozen young Thai coconut meat, coconut water, and coconut cream to your Ninja pitcher and blend on the ‘Frozen Drink’ setting until smooth. Add the remaining ingredients (excluding the toppings) and repeat. You may need to scrape down the sides with a spatula and blend again to ensure all of the ingredients are fully blended.
Divide between 2 cereal sized bowls (or just 1 if you’re feeling extra hungry) then drizzle with your melted chocolate and top with 1/4 cup (a small handful) of coconut flakes per person.
- If you can’t find frozen virgin young Thai coconut meat, then 200g of regular frozen coconut flesh should be fine. Alternatively, soak 80g of desiccated coconut in 1 cup of freshly boiled water for 10-30 minutes to rehydrate. Drain in a large sieve and push out any excess water using the back of a spoon. Add as you would frozen coconut meat.
- For the coconut cream leave a tin of coconut milk in the fridge overnight then scoop out the hard white cream but not the liquid!
- Frozen grapes are easy to make yourself – just wash a punnet of grapes, remove from the stems, dry, and freeze overnight in an airtight container.
