Making your own nut butter is so simple and such a great way to create and customize lots of exciting different flavours. This one has a bit of everything! It’s rich and nutty, fragrant from the coconut and has a sour fruity kick from the berry powder! There’s no added oils or preservatives here and the only equipment you’ll need is your food processor!
Berry, Coconut and Cashew Butter
- 225g cashews & peanuts mixed
- 100g desiccated coconut
- 3 heaped tsp freeze dried berry powdercan add more if you desire
Pour the nuts and coconut into your food processor and blend until they start to form a smooth paste.
Continue to blend, allowing the oils to release and eventually you should be left with a beautifully smooth and creamy consistency. This may take a little while, so be patient and scrape down the sides to ensure even blending.
Add in the berry powder and blend once more.
Store in an airtight jar and enjoy!
