Warm, Comforting and Moist Breakfast Banana and Chocolate Chip Bread.
Banana, Yogurt & Chocolate Chip Bread
- 1 egg
- 1 tsp vanilla extract
- 100g coconut oil
- 160g greek yogurt
- 170g honey
- 3 bananas, mashed
- 90g wholewheat flour
- 45g oat flour
- 40g cocoa / cacao powder
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 1/4 tsp cinnamon powder
- 150g dark chocolate chips
- 1 banana, sliced in half and brushed with a little honey
Line a 9×5 loaf tin with Greaseproof Paper & preheat oven to 180 C or Gas Mark 4.
Combine Egg, Vanilla, Coconut Oil, Greek Yoghurt, Honey and Banana in a blender and blend until well combined. This should take no longer than a minute.
Pour into a large bowl and fold in the Wholewheat Flour, Oat Flour, Cocoa Powder, Baking Powder, Bicarbonate of Soda, Salt, Cinnamon Powder and Dark Chocolate Chips. Mix until really well combined.
Pour mixture into the lined loaf tin and level out with the back of a tablespoon/spatula.
Arrange the sliced banana on top and push into the mixture very slightly.
Bake for 45 – 50 minutes and enjoy warm!
