Seriously who doesn’t like banana bread? I have to admit that banana bread is one of my favoruite things to make and eat of course! This recipe can easily be adapted to a vegan diet by switching to a flax-egg. Get your children involved with the baking by allowing them to join in the fun.
Banana, Peanut & Dark Chocolate Banana Bread
This recipe if of course refined sugar-free.
- 360g whole-wheat self raising flour
- 100g coconut sugar
- 1 tbsp baking powder
- Pinch sea salt
- 5 very ripe bananas
- 3 eggs (vegan - replace with flax eggs)
- 100g good quality dark chocolate
- 140ml oat milk
- 80ml olive oil
- 80g Jake’s Boost Cacao Boost nut butter
- Chia seeds
Begin by pre-heating the over at 180C degrees/Gas mark 4.
Using the cup of your Ninja Kitchen System, throw in 4 bananas cut in half, 60ml of oat milk and the Jake Boost Cacao Boost Butter, pulse until the ingredients are well combines – you will achieve a smoothie like consistency, set aside.
Using a large mixing bowl pour in the flour, coconut sugar, baking powder and a pinch of salt and stir to combine the ingredients thoroughly.
Create a hole in the centre of the dry ingredients and pour in the eggs, olive oil and the smoothie you have previously made, combine gently to form the cake batter.
Finally pour in the dark chocolate chopped into pieces and again combine gently.
Pour the batter into a greased loaf tin, place thin slices of banana on top of the batter and sprinkle some chia seeds.
Bake in the oven for 40 minutes, then reduce the temperature slightly and bake for another 10-15 minutes at a lower temperature.
Remove the banana bread from the oven and allow it to cool completely before removing from the tin.
