Banana & Goji Walnut Caramel Cookies

This what I call a treat with benefits! These cookies are so soft and sweet but perfectly balanced with crunch from walnuts and juicy goji berries. The riper the banana, the tastier and more caramelly the cookies will taste. They will satisfy your sweet tooth and give you long-lasting energy!

Ingredients

  • 100g mashed ripe banana
  • 49g almonds
  • 30g buckwheat groats
  • 20g coconut flour
  • 2 tbsp coconut nectar
  • 1 tbsp lucuma (optional)
  • 2 tbsp goji berries
  • 20g walnuts
  • Blaze
  • 1 tbsp cashew butter
  • 1 tbsp coconut nectar
  • 1 tbsp coconut oil

Instructions

  1. Combine almonds, buckwheat, and coconut flour in the food processor and grind till it reaches flour consistency, add banana and coconut nectar and process untill the dough forms.

  2. Stir in walnuts, goji berries, and lucuma and pulse a few times so all nuts are broken down.

  3. Wet your hands and form cookies, place them on the tray and bake in preheated oven at 180 degrees for 15-20 minutes. They should be golden and your house will start to smell amazing.

  4. Let the cookies cool completely before coating them in the glaze

  5. Combine all the ingredients for the glaze in the saucepan over low heat and let it bubble away for at least 5 minutes, the mixture should be slightly thicker and color should be deeper towards the end

  6. Carefully dip each cookie in the glaze, place them back on the tray, allow to cool and leave to set in the fridge for 1 hour.
