Baked Falafel with a Flax and Sesame Seed Crust

I adore Falafel but the deep fried ones don’t look good on my hips (hah!), so I have started to make a baked version with smoked paprika, cumin and a flax and sesame seed crust. You can pan fry the falafel before popping them into the oven. I serve them in Pitta Pockets with, Pickles, Salad and a Tahini dressing. SO delicious!

Ingredients

  • Tahini Dressing
  • 2 tbsp tahini
  • Juice of 1 lemon
  • 1/4 tsp sumac (optional)
  • 2 tbsp water
  • For the Falafel
  • 400g chickpeas drained
  • 2 cloves garlic (crushed)
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Pinch chilli flakes
  • 10g chopped parsley
  • Juice of 1/2 lemon
  • 4 tbsp ground flax seeds
  • 1/2 tbsp baking powder
  • 2 tbsp sesame seeds
  • 1 extra tbsp ground flaxseeds
  • To taste salt and pepper

Instructions

  1. Combine all the ingredients for the tahini dressing in a small bowl and set aside.

  2. Preheat the oven to Gas Mark 4 or 175 C.

  3. Blend all of the ingredients for the falafel until they are combined, and shape into small falafel balls.

  4. In a separate bowl combine the flaxseeds and sesame seeds. Coat the falafel in the sesame and flax mix and bake in a lined tray for 20 minutes, turning mid way.

  5. Enjoy with warm pita bread, salad, pickles (I love turnip), and the tahini dressing.
