Apple Pie Pancakes

For a healthy but delicious breakfast, try these apple pie pancakes. The white flour in traditional pancake recipes has been replaced be oats, buckwheat and ground almonds, which offer more nutrition. Plus, the egg has been replaced by flax seeds to make these pancakes suitable for vegans. Give them a go if you’re looking to beat breakfast boredom.

Ingredients

  • 100g rolled oats
  • 60g buckwheat four
  • 25g ground almonds
  • 1-2 tsp coconut or brown sugar (optional)
  • 100g unsweetened apple sauce
  • 20g flax seeds
  • 4 tbsp water
  • ½ tsp vanilla seeds/ extract
  • ½ tsp ground cinnamon
  • 200ml rice milk
  • Coconut oil for greasing the pan (optional)
  • Toppings
  • Almond butter and ground cinnamon

Instructions

  1. Mix together the flax seed and water, then set it aside so that it can gel together.

  2. Blend the oats until the texture becomes like that of flour. You might need to turn off the blender half way through and stir the oats to make sure that they are all ground up to the same thickness.

  3. Mix together all of the dry ingredients, then stir in the flax seed mixture, apple sauce, milk and vanilla extract. The mixture will be quite thick and doughy.

  4. Heat a non-stick pan on a medium to high heat. Grease the pan with coconut oil if you think the pancake will stick.

  5. Place 2 tbsp of pancake mixture in the pan and spread it down into a pancake shape. Cook for around 4 minutes on each side.

  6. Repeat step 5 until you have used up all of the pancake batter.

  7. Serve with your favourite toppings, for example almond butter and cinnamon or maple syrup.
