I love apple crumble, but most recipes seem to serve a small army! Try this scaled down version. The crunchy-crumbly topping is packed with flavour from roasted pecans, cinnamon and ginger.
Apple & Pecan Crumble for One
- 1 large cooking apple (+ optional sprinkle of sugar)
- 45g pecan nuts
- 30g rolled oats
- 1 tbsp coconut sugar
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1 tbsp coconut oil, melted
Pre-heat the oven to 160°c
Peel and cut up the apple. The fill a small enamel dish (or similar oven safe dish) with the pieces. The apple should come to the top of the dish. If your apple is very sour add a sprinkle of sugar.
Place the dish in the oven for 10 minutes for the apple to cook and reduce.
Add the pecans, oats, coconut sugar and spices to your blender and pulse until the mixture resembles a coarse flour.
Pour the mixture into a bowl and add the coconut oil. Stir the ingredients together until crumbs form.
Spread the topping onto the cooked apples and bake for 10 minutes until crispy and golden on top.
Serve with yogurt, custard or ice-cream.
