Whether you’re familiar with parkin or not, this healthy version is made from cooked apples to cut down on the fat and sugar content while still retaining a delicious, moist and sticky texture. Combined with dates, cinnamon and ginger, this treat is full of festive flavours!
Apple & Date Parkin
- 100g coconut oil
- 100g maple syrup
- 75g molasses
- 75g coconut sugar
- 150g oat flour
- 100g gluten-free plain flour
- 2 teaspoons cinnamon
- 2 teaspoons ground ginger
- 100g chopped dates
- 2 eggs
- 100g cooked apples
Preheat the oven to 180 degrees C and grease and line a 9x9in baking tin.
Gently melt the coconut oil, maple syrup, molasses and coconut sugar then set aside and leave to cool for 10 minutes.
Mix together the oat flour, plain flour, cinnamon, ginger and dates in a bowl.
Whizz up the cooked apples and eggs in our Ninja Kitchen Nutri Ninja Auto IQ until smooth then pour into the dry ingredients along with the melted coconut oil mixture. Fold in gently to combine.
Spoon into the prepared tin and smooth out. Bake for 30 minutes until golden and firmed up. Leave to cool then slice and serve.
