Acai Energy Balls

A delicious treat packed with benefits from Acai, a powerful Brazilian super fruit. Packed with antioxidants to promote healthy skin, this powerful super fruit is also excellent for digestion and boost your energy levels. These energy balls are perfect to snack on or add to a lunch box.

This recipe makes approximately 8-10 energy balls.

Ingredients

  • 250g pitted dates
  • 100g raw cashew nuts
  • 3 tsp. acai powder + extra for dusting
  • 70g oats
  • 3 tbsp. fresh lemon juice
  • 2 tbsp. water

Instructions

  1. Place all of the ingredients into the bow of your Ninja Kitchen system, pulse a few times until the ingredients combine together – you don’t want to over pulse as you want some crunch from the cashew nuts.

  2. Add some warm water into a small cereal bowl to wet your hands as you roll the energy balls; also add some acai powder to roll the balls.

  3. Wet your hands, grab a bit of the mixture and begin rolling the balls using your hands when completed roll the balls in acai powder, repeat until you use all of the mixture.
