Acai Energy Balls
This recipe makes approximately 8-10 energy balls.
- 250g pitted dates
- 100g raw cashew nuts
- 3 tsp. acai powder + extra for dusting
- 70g oats
- 3 tbsp. fresh lemon juice
- 2 tbsp. water
Place all of the ingredients into the bow of your Ninja Kitchen system, pulse a few times until the ingredients combine together – you don’t want to over pulse as you want some crunch from the cashew nuts.
Add some warm water into a small cereal bowl to wet your hands as you roll the energy balls; also add some acai powder to roll the balls.
Wet your hands, grab a bit of the mixture and begin rolling the balls using your hands when completed roll the balls in acai powder, repeat until you use all of the mixture.
