What makes a tastier, quicker snack then 4 ingredient energy bites?! This recipe is so simple and affordable and are ready to be enjoyed in no time, perfect for an afternoon snack or a pre-workout energy boost!

4 Ingredient Coconut & Ginger Energy Bites

They are gluten free, low FODMAP, refined sugar free and vegan.


  • 200g medjool dates
  • 100g smooth peanut butter
  • 25g grated coconut
  • 1 tsp ground ginger

Prep Time


  1. Start by roughly chopping the dates, this makes them easier to process

  2. Simply place all the ingredients in your food processor and process for approximately 30 seconds, until everything is combined

  3. Line a plate with cling film (to prevent them from sticking as they set)

  4. Roll pieces of the mixture between your hands to form a ball shape and place it on the plate, repeat until all the mixture is used

  5. Place the energy bites in the fridge to set for 30 minutes before enjoying

  6. Store in the fridge for best results

After being diagnosed with coeliac disease and IBS, I had to completely overhaul my diet. I found that the majority of gluten-free food on offer was tasteless, stodgy and full of sugar. I was eventually forced to embark on the low FODMAP diet, which meant I had to make even more changes to my diet. After a short while I became disillusioned with the tasteless, stodgy and sugar-laden foods available to me, so I decided to create my own.
