4 Ingredient Coconut & Ginger Energy Bites
They are gluten free, low FODMAP, refined sugar free and vegan.
- 200g medjool dates
- 100g smooth peanut butter
- 25g grated coconut
- 1 tsp ground ginger
Start by roughly chopping the dates, this makes them easier to process
Simply place all the ingredients in your food processor and process for approximately 30 seconds, until everything is combined
Line a plate with cling film (to prevent them from sticking as they set)
Roll pieces of the mixture between your hands to form a ball shape and place it on the plate, repeat until all the mixture is used
Place the energy bites in the fridge to set for 30 minutes before enjoying
Store in the fridge for best results
